I don’t, and I cringe when I see people do it.
But, I’ll go out on a limb and suggest that the people who do it like the way it tastes.

My brother salts both watermelon and cantalope. Like you, I don’t understand why.
It tastes better to me… let’s see if I can describe it.
The watermelon taste comes to the front while the watery taste of a jucy watermelon gets pushed back. Then there’s the contrast between the salt and the sweet.
The trick is to put on just a little salt. Too much, and YUCK. Just like putting salt on popcorn, the trick is in getting the balance right.

I don’t really like melons but when I eat one, it’s almost always salted. Makes it juicier since the salt draws more juice up to the surface.

You really do learn something every day, apparently; I had no idea that people salted their melons! I may have to give it a go the next time I get my hands on a good melon.
I was surprised to find out how often sodium is added to candy & sweets. I imagine in small amounts, it’s a flavor enhancer.
Never tried it myself.
The salt creates a delicious sensation of contrasts, and it actually makes the sweetness of the fruit seem more significant, even bolder on the taste buds.
Which is why I always salt watermelon and apples.
I also put ketchup on potato chips. But that’s for another thread!
My first reaction was yuck but then I remembered that last summer I had an addiction to a salad made with watermelon, feta cheese and onion with lemon juice.
I always salt apples, because they taste good that way.
Never occurred to me that it might work for watermelon, too.
I don’t really like watermelon, though. Anything that gets me sticky and isn’t sex rates pretty low.
Maybe salt will help.

Having seen the words “watermelon” and “salt” together in a sentence, I must now die.
Salt is a flavor enhancer for almost any type of food. You’d probably be surprised by how many sweet foods have sodium on their list of ingredients.

I use ketchup.
Used to salt watermelon as a kid, no idea why. I don’t recall an adult relative doing this, and none of them would cop to it years later when I asked about it. My best guess in my case, is that I liked salt on my watermelon like I loved the taste of Miracle Whip, then my tastebuds formed.

I was taught to do it when I was little but I abandoned the practice as I got older. While salt on watermelon doesn’t taste bad to me, I like it better in the unadulterated state.
Of course you put salt on watermelons, it makes it taste better. Sheesh.
Ditto on the pepper on cantaloupe too.
What are you guys going to complain about next, people who put sugar in tea?
