Does anyone have a great corn relish recipe?

My 76 year old mother loves corn relish. Her mother used to make it. Sometimes I can find it canned by farms and sold at roadside stands. It doesn’t look that complicated, corn, red & green bell pepper, onions and spices in a brine. Does anyone have a sure-fire recipe?

I made this one from Martha Stewart for Christmas Gifts for coworkers and the like two years ago. It’s quite good from what I was told. It was my first attempt at canning.

Missy - Thanks so much, Missy! That recipe doesn’t look like you have to can it into jars with boiling and what have you. (Can you tell I’ve never canned - it intimidates me. What if I botulized everyone??) Was it difficult? And (hanging my head in shame) would there be a huge difference between using fresh frozen corn and cutting fresh corn off the ear?

It’s funny - I can throw together great homemade bread, but canning just seems so scary.

Actually, you don’t have to can it - I only canned it because I was giving it away and made it in advance. It stays good in the fridge if it’s tightly covered.

(And I used frozen corn. They didn’t have any fresh - I did this in November in Illinois. :D)

My sister-in-law the corn freak swears by this one:

INGREDIENTS:
1 quart fresh corn kernels
5 cups chopped green bell peppers
2 cups chopped onion
2 cups coarsely chopped unpeeled cucumber
4 cups chopped red ripe tomatoes
4 cups vinegar
2 cups sugar
1/4 cup salt
1 tablespoon turmeric
1 tablespoon mustard seed
PREPARATION:
Combine prepared vegetables in a large kettle. Add vinegar, sugar, salt, turmeric, and mustard seed.
Heat to boiling, simmer 25 minutes or until the vegetables are tender.

Seal in hot, sterilized canning jars.
Makes about six pints.

Missy, Annie - Thanks so much. I might make small batches of each and see which my mother likes best. That way I don’t have to can. She’s a big fan of most things brined and pickled.

I copy & pasted my SIL’s recipe exactly as she e-mailed it to me. See how much she makes? This is a woman who makes vanilla ice cream with brown sugar and cream corn in it.

Annie - I made a your S-I-L’s recipe, slightly changed (I didn’t have everything. But my mother loved it - the only thing she recommended after tasting was that I add a bit of celery seed with the spices.
