This is a continual frustration… There’s some show I like, I decide I want to see what was on last night (the whole show), so I search something like “rachel maddow youtube” and all kind or irrelevant crap comes up. Including her own channel (and she’s not the only one) where it’s either not the whole show, or it’s not clear which show was aired on which date, etc.).
So if I want to see show X on day Y, how do I find it easily online?

You might not be able to, due to copyright/licensing issues. But your best bet is probably to go to the website of the show and/or the network it appears on.
I’ve done that, and depending on the show, they’re not sorted by date, or don’t label the show with the date aired, or don’t have the entire show.
Try going directly to YouTube and searching on “rachel maddow 6/12/17” or whatever show/date you are interested in.
You can also search just on the show name and use the Filters drop-down button on the left to choose the time frame (today, this week, this month). Just know that those are the upload time frames - you may get older shows that have been uploaded recently.
This is what I do when I want to find recent episodes or news stories.
