Emergency Mexican Cheese Dip Advice Needed!

Adding more of the other types of cheese might help, since they aren’t going to melt.

The suspense is killing me. I hope it lasts.

Other things that might be good in there, if you have them:

Black olives
Green onions
Jalapenos (fresh or canned)
Minced bell pepper
Black or refried beans
Chili powder
Cumin

Ok. I feel like I’m on my way to a freakin’ job interview of something!

I put in a little more mayo and I can fridge it for about 10 minutes. I’m taking the cheese and salsa with me, in case I need to make any adjustments. I need to get ready now.

Do I heat this stuff up by the way. I’ll post the results later.

NO, DON’T HEAT IT. Serve it near room-temp with some different coloured nacho chips (we’ve got normal, white, blue, and red here). When you get to the party, see if you they’ve got some things you can put on top to jazz it up a bit: maybe a dollup of sourcream, sprinkle of cheese, green onions, tomatos…

Behold the Power of Cheese!

I decided against the heat idea as soon as I posted it, too many dairy products in that bad boy to put it in the microwave.

I added some more salsa for flavor once I got there, and had a couple friends give it a taste test. They really liked it!

Everyone remarked how it tasted so much better than the old Velveeta version. I was proud.

Only one negative-Mrs. Rancid felt ill this evening, so she didn’t eat anything. I have some left over in the fridge, so hopefully she will be able to try it tomorrow.

Since your success has now made you the dip god (yes, you will be called upon to do this again!), next time you can experiment! I’d add some spices, like cumin, some chili powder, perhaps some garlic, and mince up some peppers (serrano and jalapeno are good and not real hot - use more for more hotness if you like, stick to one or two if’n you’re mild mannered) real fine and stick 'em in there too.
