I find Trip and T’Pol interesting, in terms of their characters and development so far. But what I’d really like to know is: what do these folks do when they’re off duty, besides feeding their faces or working out in the gym? Does Archer take the poor dog for a walk and then chill out in his quarters humming along to Van Morrison? Does Hoshi practice yoga on a sticky mat? Is T’Pol pursuing an advanced degree and keeping it a secret? Does Reed enjoy Royal Navy fiction? Is Travis a budding poet who doesn’t want to show his work to anyone because he doesn’t think it’s good enough? Does Phlox wonder how he’s going to reconcile with the offspring he hasn’t spoken to in so long? Does Trip borrow Hoshi’s hot plate so he can make mashed potatoes or grits when Chef isn’t in the mood?
Wouldn’t something like this help?

In the privacy of his cabin, Archer defaces holograms of the Vulcan High Command with Pothos’ fecal matter.
T’Pol late at night considers her failed carrer in Romulan pornographic movies. (That’s why the Vulcan High Command ‘is aware of them’ (Romulans)
And Phlox? Phlox has memorized “Heart of Darkness” and plans to grow up to be Mr. Kurtz
Archer, Phlox, and T’pol are interesting, and Trip has a few interesting things (but not that much, IMO). Reed is interesting do to his mysteriousness, and how you have to dig to find out stuff about him. Yet we still know very little. Merryweather is basically “there,” and Hoshi is just “translate this please, woman.” More after hours things like you suggested would pepper up the blandness of the show considerably, as would more recurring minor crewmembers.
