Are margarines/non-butter spreads in the USA significantly different from the ones we get here in the UK? I know people like butter, but I’m a bit surprised at the animosity toward the competition - is it fact-based? Are they really an unhealthy substitute for butter?

Oh man, I can’t believe I missed “butter-ish”! (Actually, I think I thought of that one while they were running through my head, but missed it when I got around to posting.)

I’m not aware they are any different there than here. For a long time margarine was marketed as a healthy substitute for butter. Turns out that’s debatable. While it has less saturated fat and is thus slightly lighter and less cholesterol inducing, the hydrogenating is essentially saturating the oils, trans-fats are now known to be unhealthy (meaning they have to ensure they aren’t using trans-fats), and there is some concern than polyunsaturated fats have different risks.

And some people just prefer butter over margarine.
