Fathead dough question

Has anyone tried it?
Mr CelticKnot is officially pre-diabetic, and we are cutting carbs and sugar as much as we can. But we love them, and are looking for decent substitutes. (I don’t care what every website and food blogger says, cauliflower is not an acceptable substitute for potatoes!)
So I want to try fathead dough, which uses mozzarella, cream cheese and almond flour instead of traditional ingredients. I would like to know what to expect, if anyone can tell me their experiences.

People love it, but I don’t. To me a pizza is the dough; the sauce and cheese are nice, and any other topping is just a garnish, but the dough is both the literal foundation of everything else, and the spiritual foundation. Fathead dough delivers pizza, sauce, and topping, but nothing else.

I’m in a distinct minority, I guess, because I’m a bit of a pizza snob, so probably you’ll like it and call my opinion uninformed.

We tried it, and it was quite dry. I’ll look at other recipes that might satisfy bread cravings.
