My sister sent me 12 lbs. of Elk, having never cooked it myself before I googled and found some recipes, most of which seemed to demand I marinate it for a good long time to make it more palatable. My sister agreed with them when I asked her, and said doing so overnight might not even be a bad idea, depending on the ingredients.
Is Elk that much stonger than say Buffalo, which I’ve had a lot of without it being marinated and didn’t think it was too gamey, if that is what we are talking about here?
Anyway, not to get sidetracked here, anyone have a favorite Elk recipe, involving marinade or not?
Elk can be rather “gamey” if you’re not used to it, and it has a low fat content (like most game) which will cause it to be dry if you don’t add some fat. I’d try just wrapping it in bacon strips and broiling it in the oven like steak. If the taste isn’t to your liking, then resort to the marinades to cover it up some. This way you at least get to taste what you’ve got before doing anything else.
Coat steaks with flour. Brown in hot oil, add 1 tbsp. Kitchen Bouquet & enough flour & liquid to create a thin gravy. Simmer for an hour or so, adding liquid if necessary, to keep the gravy from getting too thick. Steak will be wonderfully tender and tasty.
