Turkey, roast beef, or ham with fat-free cheese on a low-carb tortilla or flatbread. Raw veggies and maybe a Greek yogurt on the side. It’s filling and easy to make.
If we have leftover meatloaf: meatloaf and ketchup on whatever bread. To me that’s better than the freshly cooked warm meatloaf.
Mmm, I do love a cucumber sandwich. Cucumbers, buttered wholewheat bread, salt and pepper.
I also like a well-done grilled cheese sandwich; old cheddar between two slices of wholewheat bread, buttered on the outside, and slow-cooked so the cheese melts properly.
Meatloaf is one of those foods that gets better when re-heated, like chili and stews.

Open-faced grilled cheese.
A couple of slices of bread, sliced cheese (any type of REAL cheese) placed on top. Grill it in the oven or toaster oven and eat as-is.
It gets about 100% better if you add a thin slice of tomato about half way through grilling.

Serrano ham and cabrales cheese on crusty Spanish bread. They don’t put anything else on it and it is delicious.

and I am going to eat the hell out of some smoked (as in cooked on the smoker) Bacon and Peanut Butter next time I cook up some bacon, that sounds really good.

My sandwich is actually two parts. Italian bread or English muffin. Toast two slices of bread or two halves of muffin and lightly butter. Spread one piece with peanut butter. Spread the other piece with honey (this is dessert after you eat the peanut butter slice).
