DEATH
Do I have to pick just one?
Susan and Granny Weatherwax for women, and Vimes and (of course) DEATH for men…if DEATH counts as a man. I guess he does, since he’s a father and grandfather.

Completely forgot about Death as he was portrayed in “Colour of Magic”…

I’ve always had a secret crush on DEATH.
I’m also particularly fond of Angua and Rincewind.
Vetinari.
The man is intelligent enough to use Leonard of Quirm like a fine violin, politically able enough to know exactly when to skip town, and resilient enough to always end up back on top of the steaming heap of unmentionable substances that is Ankh-Morpork.
And all this without any of the intangible, magical, time-manipulating skills of certain characters on the Disk.

The Librarian is my favorite, although it’s a close race. There are so many great characters. Vimes, Carrot, Angua, Dibbler, Granny, Nanny and Magrat, Rincewind, the Luggage, Cohen, Death, the other horsemen, the Igors. Pratchett just keeps coming up with incredibly entertaining and likeable characters.
But any book with the Librarian is a treasure.
What about the DEATH of Rats? Sure, not as many interesting quotes, but still…
I’m also a big fan of Vimes and Vetinary, but my personal favorite duo is Om and Brutha from Small Gods.
Overall, it’s a toss between Vimes, Rincewind, and Death.

Oh man, it’s so hard to choose. For me, it’s a toss-up between Death, Vetinari, the Librarian, and the Luggage.
The Librarian, followed closely by Vimes. Though Death and Vetinari are always good.
The Auditors, in their disembodied state.
I’ve only read 3 of the books so far, but so far my favorite characters are DEATH, Susan and Ridcully. Oh, and Binky.
