Flourless peanut butter cookies

There are a variety of recipes out there, but the basic one I use is:

• 1 cup peanut butter, any kind
• 1 cup brown sugar
• 1tsp baking soda
• 1 egg
• 2 heaping Tbs of anything that will add a little body - I usually use sesame seeds but ground flax seed or teff flour is good too. And I’ve seen recipes that don’t use any additional ingredient like this, but they require refrigerating the dough to shape it into balls, which I never do.

Drop by large spoonfuls onto ungreased cookie sheet (the original recipe I have says 1/4 cup at a time, but that’s a horrifyingly huge amount). Bake at 350 for about 15 minutes.


These are delicious, quick to make, and rely on ingredients that I always have on hand. The only problem is that they are so delicious that after I eat one, I have to eat a second one. And after I eat two cookies I feel like I have a bowling ball in my stomach.

Does anyone else make these? Do you have good variations? I often add a tsp of vanilla, a pinch of salt, 2-3 Tbs cocoa, and/or a handful of chocolate chips. Yummy.

We make these quite often especially this time of year. We don’t use baking soda, though. Just the peanut butter, egg and sugar. Sometimes I’ll add chocolate chips. They’re my favorite homemade cookies.
