What are you taking along as your contribution to the meal?
I’ll be making pumpkin and black bean soup:
**Caribbean Pumpkin Soup
**
Makes 4 servings (5 cups)
2/3 cup chopped onion
2/3 cup chopped red bell pepper
2 tsp minced garlic
1 tsp cumin
2-1/2 cups chicken broth
1 15-oz can pumpkin puree
1 15-oz can black beans, rinsed
1 15-oz can diced tomatoes, drained
salt and pepper to taste
(optional: cilantro and/or sour cream for garnish)
Saute onion and bell pepper (use either nonstick spray or a little oil) till tender. Add garlic and cumin and cook another minute. Stir in everything else and bring to a boil. Reduce heat, cover, and simmer five minutes to blend flavors.
Bread - I’m making a whole wheat loaf with a blend of seeds added, red wheat berries, sunflower seeds, pearled barley. Using “white whole wheat” which has a lighter flavor than regular whole wheat.
I’m the family baker. I will be taking rolls, recipe undetermined as yet, and dessert, ditto. My brother-in-law, the host, loves cheesecake, and his wife likes the chocolate-toffee cake I make. I don’t care what their kids like. My father-in-law and husband are fond of gingerbread. My mother-in-law is diet-crazy and would probably prefer I brought celery sticks for dessert. She can stick them.
I haven’t quite decided yet. I will be making at least one possibly three of these:
Cranberry Orange relish
Sweet Potato spice muffins
Sweet Potato Pie
Green Bean Cassarole
Noodle Kuggle
I will absolutley be bringing the relish, and probably one of the sweet potato dishes (probably not both), and MAYBE one of the cassaroles (Kuggle is a type of casserole) but that depends on how ambitious I am feeling and how much time I have to cook. My SIL is going to stay with us and will need my kitchen to make the dressing (not stuffing, nothing is getting stuffed) so that will be a limiting factor.
My wife’s controbution will be brown and serve rolls since she doesn’t cook.
Twickster, glorious twickster! So YOU’RE the one. I just could not remember who contributed this recipe originally. Good Lord, am I indebted to you! I have made this recipe so many times and had the recipe requested so many time that I’ve lost count! It is absolutely the easiest recipe in relation to the number of compliments and recipe requests that you will ever make. I made it for the first time last Thanksgiving and it was a tremendous hit. My stepdaughter just requested it a few days ago. You rule!
Anyway, I always bring something healthy like a veggie or fruit try and a low-cal dip to counteract the rest of the meal.
I’ll bring choereg, a traditional Armenian bread. It will be the first time my very English family has had it, but we’ll see what they think. I’ll also bring brownies and possibly some other baked goods.
I was going to bring all the gluten free versions of the classics for the sprog, but the sprog will be out of state with my husband. (Please Og, don’t let them poison her with gluten while I’m not there to watch over her for 5 days!!!)
Generally I go to Mom’s early and just help her cook everything there. I guess since it’s just me and the teenager, we’ll go over there Wednesday night and sleep over. She’ll be so excited (no, really, she will).
So I’m making whatever Mom says needs making, I guess!
We (meaning myself, VeryCoolSpouse, and the 4 little ones) will be taking:
Tofurky (we being the vegetarians)
Gravy (mushroom)
Some vegetable (prob’ly green beans)
Stuffing
Pie (sweet potato)
Dinner will be at younger son+daughter-in-law’s (they are supplying turkey & etc.), elder son is visiting GoofyFormerSpouse in Boston, eldest daughter + son-in-law will bring something and 2nd daughter…who knows, she’ll probably be visiting AlcoholicBoyfriend in the deep south somewhere.
I’ll also be making most of dinner. We’re having pumpkin soup, turkey (made properly a la St. Alton’s brining instructions), corn pudding, sweet potatoes, a green vegetable, rolls and pumpkin custard.
