Fork Smashed Red Potatoes

I can’t find the recipe for these. I thought it was at pioneerwoman.com but I can’t find it there. It’s a really simple recipe that involves boiling the potatoes until soft and smashing them with a fork, but I can’t remember what else it involves.

Does anyone have the recipe or a link to it? It is a really popular side dish and got a lot of attention a few years ago.

That website is completely different than I remember it. The name of the dish is different, too.

We had these for Christmas Eve dinner (with steak, shrimp, scallops, and asparagus…yum).

They are awesome. Use small potaoes - very small. Big ones just don’t smash properly. Mine turned out just fantastic tonight.

I only had them once. When I got home about two hours after scheduled dinner time. They were not good. :frowning:

I really want to try them again.

We make them with yukon golds and they are fantastic … and you have to have them fresh out of the oven, reheated or cold just does not work at all :frowning:

I turned my totally noncooking brother on to these, and he actually taught himself how to make them from the website. I have hopes he may decide to learn to cook other stuff that doesnt require a microwave.:smiley:

The recipe can be improved 100% by sprinkling chopped chilis over the potatoes with the rosemary. Once you try them with that combination you’ll be hooked.
