Fusion food with that extra...something

The local paper has a feature on best food trucks in the area, and this one really stood out: Hillbilly Hibachi.

“Hillbilly Hibachi is these country boys’ take on the Japanese inspired favorite without all the formalities and fancy moves.”

Now I have a sudden hankering for hibachi, only I will have to drive some distance for it, since these guys focus on eastern Kentucky, including my old stomping grounds of Louisa and Prestonsburg. Last Friday they were at Bluegrass Urology in Ashland and reportedly sold out early.

Might be a worthy successor to Gershon Weinberg’s Real Pork Barbecue.

Grace’s beef chips vuruga is amazing, as is her coconut shrimp, wakanda braised beef, and plantains.
