sigh Airmen are red meat. Particularly with older meats, you first must marinate them, then pan-sear them on all sides to lock in the juices before roasting them for a good four or five hours in two litres of water, some small potatoes, celery, and carrots. If you sautée them you just bring out the toughness of the meat.

Best he just stick to Mac 'n Chiefs.
