Gingerbread recipes

anyone have any good Gingerbread and Gingerbread people recipes? Preferrably using fresh ginger (or hints on how to substitute)?

My wife found one in her Moulinex food processer book, but it mentioned yeast in the recipe and not in the ingredients. Also listed baking powder but not baking soda. Needless to say, without yeast or baking powder, the ginger bread did not rise. However, it was a big hit in the household and was hoovered down.

This recipe made great gingerbread cookies for me. I used 2 Tablespoons of fresh grated ginger rather than dry.

I once bought some gingerbread from the store and was very surprised to find it was . . . well, sweet ginger-flavored bread. With the texture and consistency of bread, and yellow in color. Instead of the heavy, dense, dark-brown stuff gingerbread men are made of. Which are you thinking of making?
