Give me some easy recipes

Anyone have any suggestions for fairly easy recipes that don’t involve an oven? My oven doesn’t work, and we’re probably not going to fix it anytime soon, since it hasn’t been a big problem.

However, this means that we’re all living off of pasta, grilled stuff and chicken piccata, which is starting to get a little old. So, fire away with any of your favorite suggestions. Bonus points for using few dishes or recipes which are similar to each other, ingredient-wise.

Bacon, frying pan, mayo and whitebread. Fry, slather and enjoy. Add lettuce and tomato if ye want.

Here’s one that should meet your requirements:

LiveOnAPlane’s Mom’s Baked Beans

2 Cans baked beans (15/16 oz…I’m in a hotel and can’t look in the pantry. We prefer Bush’s, but whatever you like will do)
1/2 Pound hamburger
3 Tablespoons ketchup
3 Tablespoons dark brown sugar
1/2 Medium onion, diced

Put hamburge & onions in a pot. Cook together until hamburger is browned. Drain well, return to pot. Add rest of ingredients. Simmer for 15 minutes.

You can also substitute or add to this those lillte cocktail weiners.

Corn tortillas
Hamburger
Ore Ida Potatos O’Brien
Enchilada sauce
Cheddar Cheese
Tomato, Onion, Avacado
Season to taste with garlic, pepper, hot seeds, salsa, etc…whatever you have on hand.

Cut tortillas in half
“paint” enchilada sauce on bottom and sides of dish
Place a layer of tortillas on bottom of dish, placing the cut side against the side of the dish (you’ll get it when you see it. It makes them fit better)
Spoon browned ground beef, onion and Potatos O’Brien in an even layer on top of tortillas. Place another layer of tortillas on that. Paint/pour more enchilada sauce, do one more layer.

Top with grated cheese.
Nuke until cheese is melted.
Garnish with avacado and tomato slices.

This totally rocks.

1 lb shrimp, peeled & deveined
1 can diced tomatoes
1 bag fresh spinach
1 can artichoke hearts
1 c feta cheese, crumbled
1 clove garlic, crushed
fresh basil
2 T olive oil

In a large skillet, over med-high heat, cook garlic in olive oil until soft. Add shrimp and cook until almost done, 5 or 6 minutes. Remove shrimp and keep warm.

Put tomatoes and artichoke hearts in skillet, and simmer until hot. Add shrimp back in. Add spinach and cook until just wilted, then add basil and feta. NOTE- feta will not melt.

Serve over pasta or rice. It’s even better leftover.

I made meatball soup with canned and frozen stuff on hand yesterday. I was so proud of myself!

Beans (I cooked up some pintos with chicken bullion cubes but canned beans would work fine)

Frozen Italian-style meatballs

Canned tomatoes – chunks and sauce

Pasta (I used shells)

Veggies – spinach, carrots, peas (fresh is better but canned is okay)

Quick and easy, and very tasty.
