Gluten-free recipes?

About two months ago, one of my coworkers was diagnosed with celiac disease and has to eat a gluten-free diet. He and his wife are having trouble finding recipes for bread that he can enjoy eating. He’d like something a little more light and airy and not so dense and crumbly. He doesn’t seem to really care for rice flour. So, I told him I’d see if I could find anything for him.

He’d also really like a pizza crust that tastes like the real thing, or as close as possible. I recall a thread in which Mangetout mentioned making pizza for coworkers that was gluten-free, and nobody even noticed, so if he’s reading this, I’d love to get that recipe.

Any really good gluten-free recipes besides that would be greatly appreciated.

It’s possible to make bread which is acceptable but it won’t be the same as wheat bread. The best bread I’ve achieved has been in a breadmaker with a GF setting.

I highly recommend that he buys Bette Hagman’s cookbooks. There’s a french bread recipe in there which is excellent and which makes great pizza bases. It does get easier with time as you get the hang of how to bake GF.

is a good site to start with. If you want to email me, I can give you some of my cake recipes. You say he’s not keen on rice flour? Has he tried different brands? Some are grittier than others. I use a lot of rice flour, chickpea flour, lentil flour, arrowroot flour, tapioca flour and potato flour.
