Had to buy more mushrooms and shallots than I really need for my spaghetti sauce. Can anyone relate or point to a slow cooker recipe? I like chicken, pork, and beef.

Oh, BTW I have been looking online and the recipes there are always too complicated - they include ingredients that I’ve never heard of, or can only be found in specialty stores.
Do you eat meat? If so, what kind do you have on hand? And what vegetables? Are you willing to go to the store or just you what’s in your kitchen.
If you have some sort of beef on hand, put chopped shallots, some garlic, olive oil (or omit if the beef is fatty) in bottom of crockpot–put beef on top of that mixture–add salt, pepper, spices beef stock & mushrooms in the crock pot & cook for a few hours, until you can shred beef with a fork.
Serve on french rolls with with cheese
If your a chicken person, go for chicken masala. This recipe doesn’t call for shallots, but throw them on in!
I don’t want to nitpick, but there is another dish with this or a similar name, so I should note this is a link to chicken marsala, with an “r,” the Italian dish. Chicken masala would be a South Asian type of dish with a fragrant spice mixture (the “masala.”) Like this one.

I too have mushrooms and shallots and also a goodly chunk of beef and I’m planning on putting it, with those veggies, some regular onions, garlic, a packet of onion soup mix and a beer into the crockpot probably tomorrow or Saturday. Should be pretty good over smashed taters.
