Tonight, after a marvelous meal of Stuffed Shells Florentine, we capped the evening with caramel swirl ice cream and armagnac. The armagnac and the caramel played off each other wonderfully. Total serendipity.
What dessert combos have you discovered lately?
I made jasmine rice with coconut milk and added sugar. I used some more coconut milk to make a coconut syrup which I poured over the chilled rice and added fresh mango.
Peanut Butter and Jelly spring rolls.
White chocolate cheesecake with raspberry puree & Bailey’s & coffee.
My favorite simple dessert, a nice glass of red wine and an ounce or two of bittersweet chocolate.
I once had a cheesecake in Germany that had some kind of fruit cocktail impregnated in it. It was simply Quark. But I don’t know what kind of Quark 'twas or the fruit mixture. Probably the most intensley cheesey and fruity flavors I have ever had. A light sweetness that balanced everything. The fruit simple to the basic richness.
My signature triple layered chocolate mousse.
Dark Chocolate with Orange on the bottom, White Chocolate with Pasionfruit in the middle an then Dark Chocolate with Line at the top. Garnished with some crushed almonds and a sprinkle of maldon sea salt.

Pecan pie cheesecake.
To die for. (but so rich that if you eat it regularly, you probably will; and sooner than later.)
