Just 5 minutes ago the door bell rang, rather late at night. When I answered it no one was there. But sitting on my welcome mat was… a zucchini. Attached was a simple note saying, “Happy National Put a Zucchini on your Friend’s Porch Day!”
I was previously unaware of this day, but shall celebrate it with great gusto in the future. Is it every August 8th, or is it just the second Monday in August?
Someone told me “zucchini” is Italian for “little squash”. Is that true? If it is, happy little squash day, everyone!! ~tosses gourds in the air, and at the neighbor’s mailbox, some strike the side of their house. For good luck, of course~
After the plants really start to produce (and they do, they really start to produce produce), they can quickly become boring. And like a good friend of mine says “zucchini is over rated”.
So I will send you some! PM me for your free yellow crooknecked zucchini squashes!
Hey lone cashew, thanks much for the offer. I think it’ll be more trouble for you sending them than me going out to a farm stand and buying a few. It’s thought that counts, right? You are okay in my book.
I am SO glad there is no zucchini in the farm share this week (a reprieve!). Last week in desperation I made zucchini brownies (here) and was pleasantly surprised at the result. Very interesting recipe - the zucchini provides almost all the liquid (but is not a substitute for fat - the recipe contains oil). I made them in a 8x10 pan for more height and they were very tasty, fudgey and held their moisture well.
I work as a baker in a cafe located in our city library. We have some garden space and have been growing herbs for use in the cafe. But there are also some green bell peppers, tomatoes, and yellow squash.
I’ve been using a zucchini bread recipe and substituting yellow squash instead. Their texture is pretty similar. Folks have been buying the heck out of them because if something has organic, locally grown veggies it must be healthy, right? Well, no matter that there’s oil and sugar and regular white flour in there.
It makes great muffins and small loaves though, and I got it out of a cookbook from a cafeteria in St. Joseph, MO.
I was making baba ghanoush the other day. Eggplant was rather expensive, and I only found one that was nice looking. So I substituted zucchini for half of the eggplant in the recipe. It wasn’t bad, and it got rid of a zucchini!
