Where I put the zucchini

Friends gave me zucchini from their garden, since they were going out of the country. Wanna know where I put it?

I have a little baking dish, I’m guessing about 5" by 8". I sliced the zucchini (or courgette, if you prefer) into rounds and put them in the baking dish. Next, I minced a white onion (which my friends also gave me) and put that on top of the squash. I had some bread crumbs in the cupboard, so I covered the onion layer with that. Next I put some half-and-half in, pouring it over the bread crumbs. Finally, I topped it with shredded Quattro Fromaggio. I covered it with foil, then put it into the convection toaster oven. I set the temperature to 325ºF and set the timer to 60 minutes. When the toaster oven dinged I took the foil off and baked it another 10 minutes to brown the cheese.

It came out pretty tasty. :slight_smile: Perhaps it could use a little salt (the cheese is pretty salty), and maybe a touch of black pepper. Some garlic would not have been out of line. But it’s fine as it is.

Isn’t that basically what ratatouille is?

Ratatouille has eggplant in it but your dish is in the same ball park. I think you’d like ratatouillie a lot. It’s pretty easy to make.

Apparently, it also has bell peppers and herbs; and no cheese or bread crumbs. Looks good, though.

There are versions with cheese and other variations. There are some good ones on Epicurious.

Where I put the zucchini is very different.

Oh, right. Yes I was only meaning zucchini bread. I was not talking about carnal relations with food.
