Josie Over was a frequent guest on TV shows set in Hawaii. She was married to a Donald Over, himself a guest in a few “Hawaii Five-O” episodes. Neither did a lot of acting roles, though, so I don’t know what their day jobs were.
This article by local writer Dave Donnelly (another frequent “Hawaii Five-O” guest) indicates she was already dead in 1999:
There is a “Donald Over” on the Social Security Death index dying in 1995. That’s probably the husband. My guess is that she would have been born sometime between 1938 and 1948. (“Hawaii Five-O” debuted in 1968. She would have been at least 20, but probably not over 30.)
There is also a “Don and Josie Over Memorial Fund,” although I don’t know exactly what if funds.
IMDB says she died in 2005. Assuming that that Donnelly is correct in his aforementioned article (and he should know), that’s *plain fiction. Unfortunately, he died a couple of years ago, so he can’t be asked.

*And getting it removed is not an easy task. IMDB has a deference to priority where birth/death dates are concerned, and once someone posts one (even if it’s incorrect), you have to provide pretty solid evidence to get it changed. The actress known as “Debbie” from “Debbie Does Dallas,” Bambi Woods, is shown as having died in 1986 (no month, date, or location) by a drug overdose. There’s no evidence of that, and as recently as last year (see documentary “The Curse of Debbie Does Dallas”), no one (who is telling) even knows what her real name was. IMDB knows about this, but they still won’t remove the date of death.
BTW, Josie Over’s IMDB entry indicates that she is seen in the “Hawaii Five-O” opening credits. That’s not true. The actress seen running along the beach and later in close-up is Elizabeth Logue. She’s not the hula dancer, either.
