Googling for one only turns up inflatable kayaks.

A quick search turns up various inflatable animals, but no yaks among them, and several stuffed plush yak toys, but none of them inflatable.
You might have to go with Kearsen’s or davidm’s suggestions and lie to your kid that it’s a yak.
Or glue hair on it to customize your own yak.
Or put a balloon inside a plush stuffed yak.
Don’t talk back, it’s not polite.
I haven’t seen them around, but I’ll keep an eye out. If I come across any I will report back promptly.

Show a little sympathy for somebody who’s down on their luck and can’t afford to pay for the necessities like food, shelter, and inflatable yaks.
I’d be broke if I donated money to everybody who wants an inflatable yak. Knowing when to draw the line and say “no” can be a real emotional experience.
What, a real yak is too spendy?
If you google custom inflatables you get lots of responses but they appear to mostly cater to businesses (promotional items) and are probably expensive.

Seriously though, the most practical suggestion is CalMeacham’s to find a suitable version of a different bovine and custom yak-ify it. A bull or buffalo inflatable is probably the best starting point.
Alibaba used to sell one but they are out of stock. They still offer a few regular yak costumes (min. purchase 1). I am quite surprised those are not more common.
