Help me make corned beef pot pie

It’s about that time of year when I corn my beef (heh) and instead of just chowing down I thought a pot pie sounded good but I’ve never come across a recipe for one and a cursory Google search looks pretty toilet. Especially the first one.

I was thinking of maybe using corned beef and colcannon under a pumpernickel dough crust - but that might be too dry. Perhaps with cabbage and thick cut bacon and caramelized onions? Maybe with thousand island, swiss cheese and sauerkraut and make like a reuben pot pie?

Can I even make pumpernickel pie dough?

Does this all sound nasty? Any tips?

Dunno about the pumpernickel crust, but could you make regular crust and mix caraway seeds into it?

Sorry, but both of those recipes sound disgusting because they use canned corned beef.

I make my own corned beef from scratch starting with a fresh flat cut brisket using Michael Ruhlman’s recipe.
