I want to make this recipe next week, but I simply could not find the Ore Ida Steam N Mash sweet potatoes listed. I could buy some canned or fresh ones, but I also have some cans of pumpkin in the cabinet. Would two cups of pumpkin work in place of the sweet potatoes? Would I need to make any other changes to the recipe?
It should work just fine. Canned pumpkin isn’t as sweet as sweet potato, so you may want to add a bit more sugar if it doesn’t seem sweet enough to you.
Personally, I’d just get a couple of sweet potatoes, and boil or bake them and use that, though.
ETA: and I know you said you could do that, I just think it’s a more interesting recipe with sweet potato vs. pumpkin
You can always mash your own sweet potatoes. Bake the sweet potatoes, peel and mash. Canned pumpkin will work, too.
Thanks, guys. The only reason I didn’t want to use real sweet potatoes was a massive desire to avoid going back to Wal-Mart. But if I hit them up late at night, it won’t be too bad. And it does seem like a more interesting recipe than pumpkin.
