Hillshire Farm Summer Sausage

It’s become a tradition over the last five years or so that someone in my family invariably gives me a Hillshire farm summer sausage for Christmas. During that time I’ve just sliced it up and eaten it on crackers, but what I’d like to do is have it on a sandwich or prepare it in some other way.

I was thinking that it might be good on a hard roll with some sun dried tomato spread. How does that sound? Failing that, what else would be a good way to eat it?

That sounds really good. It’d also be good with some kind of cheese - a good strong cheddar or swiss.

You can also dice it up and add it to scrambled eggs. It’d also probably be good in chili.

Summer sausage is the key ingredient in one of my favorite sandwiches.

Take an english muffin, toast it, spread it with butter, vegemite, add a slice of the summer sausage, top with very aged sharp cheddar, put a poached egg on top of it, sprinkle it with chipotle hot sauce, and eat!

I’ve found summer sausage is also a real spaghetti sauce enhancer. Take about two ounces of it, chop it fine, and add it to the ground beef in your basic sauce recipe (whatever that is).

Food of the gods

Sometimes we use it the same way we use ring bologna or polish sausage – in place of ham in a “boiled dinner” – cabbage, carrots, potatoes.

It’s good on pizza in place of pepperoni.

I often grate half a stick or so and add it to spaghetti sauce.

For a transcendant snack, have a slice on a cracker with sharp cheddar cheese and Major Greys Chutney. Yum!
