Finally found a source for uncooked tortillas cheap locally. But I don’t like having to make the trip to the store every time I want a burrito. Anybody have experience freezing uncooked tortillas? I would think they would take to it readily.
They freeze very well. New England isn’t exactly Mexican home-cooking country so a lot of supermarkets keep theirs in the freezer section to meet the rather meager demand. I know Mexican food and tortillas well and have never had an issue with buying them frozen and defrosting them. These aren’t special flour tortillas either. They are the same type that they sell everywhere else. I prefer fresh ones when I can get them but the frozen ones are not bad at all. They aren’t even very prone to freezer burn if you forget about them for a very long time.
You can freeze them, no problem. Otherwise, why would they sell frozen burrito’s, 3 for a $1?
Just be sure and peel them apart and put a piece of parchment or waxed paper between EACH ONE before freezing. Don’t use foil–that will crumble when frozen. This works well for non-raw flour tortillas, too. In fact, our fancy gourmet grocery store here with the on-site tortilla factory sells them in bags with pieces of tissue in between.
For the ones that are already cooked, I take the frozen one out and lay it in the toaster oven and watch for it to puff up. You can, of course, heat in a frying pan. Or on an open gas flame.
It’s fine. I used to get the big bulk package from Costco and then freeze them in 10 packs I separated out. Keep the pack you’re using in the fridge so it’s not frozen. This way I haven’t needed to use the papers in between, but I do that with the ones I make by hand so it might depend on the brand.
