I bought a pomegranate. What should I do with it?

This question, about a spinach salad that had pomegranate seeds in it, was asked about a year ago. I obviously missed it then, but since this thread is reopened, I’ll answer it now. The recipe is titled “Spinach Salad with Cranberry Vinaigrette” and is from a Pillsbury booklet that was apparently done jointly with Ocean Spray.

Makes 8 servings

Dressing
1/2 cup whole berry cranberry sauce
1/4 cup oil
2 T orange juice
2 T honey
2 T balsamic vinegar
1/4 t salt

Salad
1 (10-ox) pkg bresh baby spinach leaves
2 avocados, peeled, pitted and sliced
1 T orange juice
1/2 cup pomegranate seeds

  1. In far with tight-fitting lid, combine all dressing ingredients; shake until well blended. Refrigerate.

  2. Arrange spinach leaves on individual salad plates. Coat avocado slices with 1 tablespoon orange juice; arrange over spinach. Sprinkle with pomegranate seeds. Drizzle salads with dressing.

In the accompanying picture, the avocado slices are arranged pinwheel fashion on the spinach leaves.

I found the result to be both festive and delicious. As I said last year, most of my family politely tasted it, but found it to be “weird.” “There are *seeds * in my salad.” My MIL spit out the pomegranate seeds – in their entirety, without eating the soft part – on her plate, at the dinner table. :frowning:

As kids we just took a bite to break the skin, suck off the juice from the seed and proceded to spit the seeds at each other. If you got someone in the eye with the seed you won!
