I have leftover fresh mozzarella

Made a toothsome chicken parmigiana last night. But I never know what to do with the leftover cheese, and I often have to toss it after a week when it gets funky and sour.

I love mozzarella en carozza, but I never deep-fry at home. I’m not planning on making homemade pizza within the week. Fresh tomatoes are far in the future, so I can’t whip up a tomato/basil/mozzarella salad.

What do YOU like to do with it? Preferably something that won’t cause a immediate heart attack.

But if it sounds delicious enough, I’m willing to risk it.

Garlic bread. Slice some Italian bread, toast lightly, rub with fresh garlic, baste with olive oil and top with basil and oregano if you want. Put a slice of mozz on top and broil until it browns.

Thank you, that would work. Would basically be DINNER, or at least supper. Maybe with a cup of consumme…

Or some fruit and a few slices of prosciutto.

I like making a light meal of hard-boiled eggs, some mozzarella cheese, and either pepperoni or salami slices.

Caprese salad or caprese sandwich! Alternately, bread and deep-fry some cheese sticks.

Slice into chunks and mix with diced tomatoes and salt and pepper and maybe some Italian dressing.

Crostini would have been my suggestion, or simply just eating it sliced with a bit of olive oil and cracked pepper, or making a sandwich with some nice bread and pesto, or using it in a baked pasta dish. Most likely, though, I’d just be eating it straight.

It’s perfectly edible all by itself. Call it a snack.

I don’t understand the problem. If you have fresh mozzarella cheese then eat it. How can that be a problem?

Well, I thought I might MAKE something with it.

But I probably will just slice it and put it on a plate with some good olive oil and black pepper, as puly suggests, and eat it with a fork.

A little balsamic, a little olive oil, a little mozzarella on a baguette slice. Some fresh basil if you have it. Mmm mmm.

Slice into thin logs and roll up in prosciutto with a basil leaf. Drizzle with balsamic. Snarf down.

Get some Ruffles BBQ chips. Stuff your mouth with some of the cheese and some of the chips. Repeat. Yummy!
