I do! I just took a batch of Blueberry-Cranberry Orange Muffins out of the oven (recipe here ), and I had one with a glass of skim milk. Yum. Yum. Yum. And I have 11 more left in the batch - half go in the freezer for later joy, and the rest are breakfast this week. I am a happy camper. Oh - and these muffins are yummy too.
Tomorrow at work I’ll get our recipe for pumpkin muffins and post it. I think I could do it from memory, but I’d probably leave something out. Better safe than sorry. The pumpkin muffins are the favorite at the cafe I work for.
3 1/2 cups flour
3 cups sugar
1 1/2 teaspoons baking soda
1 teaspoon Nutmeg
1 teaspoon salt
1 teaspoon cinnamon
2 cups canned pumpkin
4 eggs
1 cup oil
2/3 cup water
Sift together dry ingredients. In bowl mix pumpkin, eggs, oil and water and blend well. Stir in dry ingredients. Scoop into greased muffin tins, filling cups about 2/3 full, whatever their size. Bake at 350 degrees Farenheit until done. Can’t really give a baking time as it will vary depending on the size of the muffin.
I love love LOVE muffins. I make up a huge container of AllMuffin mix and keep it in my cabinet. Then I’m ready…all I have to add is eggs and whatever else I have on hand. Our favorites are Lemon Lemon Blueberry, Double Banana, and Chocolate Chocolate Chip.
(Yep, all those doubled names are on purpose–I like muffins with FLAVOR.)
I add everything to my muffins–sour cream, yogurt, applesauce, sunflower seeds, you name it. If it’s in my fridge, it’s fair game.
I use the Tightwad Gazette’s Universal Muffin Recipe, add whatever bananas and chocolate chips are on hand, and I usually substitute oatmeal for about half the flour. Mmmmm…
Yeah, muffins are good. I haven’t made muffins in awhile, and I think I’ve got chocolate chips in the cabinet…
You know, mostly I like life here in the Land of the Trolls, really I do. But up until recently, there was one unforgivable lack. You see, if you asked for a “muffins” - and no, that “s” isn’t a typo, for some reason they borrowed the plural and used it to mean the singular - anyway, if you went into a cafe and asked for a “muffins”, you would be served… a miserable… dry… tasteless… little… cupcake. Sometimes it wouldn’t even have icing on it, and when it did, it would be just a little dab of powdered sugar mixed with milk.
Fortunately the times, they are a-changin’, and you can get recognizable muffins now. The little mutant cupcakes are now mostly served at children’s birthday parties as a quick and convenient sugar delivery device.
I do have a recipe for chocolate chip muffins that I will make - sometime. Problem is, I love to cook, so I am always looking at a list of things to make, and I never catch up! This week may be cream of carrot soup, and Lazy Daisy Cake - mostly because I have some of the ingredients for them already.
Still working on the muffins - and limiting myself to one a day!
