I need recipes that use lots of white chocolate. Five pounds worth of Ghiradelli white chocolate to be exact.
The only desserts I have planned so far are white chocolate cheesecake with white chocolate ganache and white chocolate-macadamia nut pie so any other suggestions would be great. If I can’t cook with it I will probably shave it down and make a neat winter window display with lots of fake snow.
Also, can I substitute white chocolate for semi-sweet? I would imagine that the sugar would have to be decreased since the white is so much sweeter than the semi.
Combine equal amounts of white chocolate and heavy cream in a double boiler to make a great white chocolate sauce/fondue. Serve over anything, or dip fruit, cake, pretzels, etc into it.
Peppermint Bark
(From Christmas With Martha Stewart Living)
2 # white chocolate, chopped into 1/2 inch pieces
12 large candy canes
1/2 t peppermint oil
Line an 11 x 7 baking sheet with parchment, set aside.
In the top of a double boiler, melt the white chocolate, stirring constantly.
With a meat tenderizer or chef’s knife, cut or pound candy into 1/4" pieces.
Stir the pieces of candy canes and peppermint oil into the melted chocolate. Remove from heat, and pour onto the prepared baking sheet, spread evenly. Chill until firm, 25 to 30 minutes. Break into pieces, serve. Store in an airtight container in the fridge for up to a week. Makes about 2 1/4 pounds.
White chocolate goes very well with creamy flavours, try white chocolate cheesecake and white chocolate creme brule. If you get equal amount of dark chocolate you can make marbled chocolate brownies. Make equal amounts of brownie mixture one using white chocolate and one using dark, then partially mix together in the baking tin before baking.
All these recipes look scrumptious. I have had Eva Luna’s Grasshopper Squares but we always called them Creme de Menthe Brownies. If I were to make those with white chocolate, would I need to reduce the amount of sugar used?
