My fiance’s birthday is coming up and I’d like to make some white chocolate fudge for his party. However, I’m not the best judge of what’ll be good because I think white chocolate is revolting. I’d like something he will think is truly spectacular. The recipe doesn’t have to be idiot-proof because I do have experience with making fudge.
So, which one of the many recipes out there is your favorite? I would prefer recipes which have no candy or nuts or anything else like that. He likes his fudge smooth and unadulterated.
If you wanted to make “easy” fudge, like this please buy GOOD white chocolate and do not use those “white confectionery chip” abominations made with palm oil.
You intrigue me. I’ve made at least ten different flavors of fudge, but I’ve never yet made white chocolate. It would take some finagling of the recipe because of the sugar in white chocolate, but I’m pretty confident I could make it. I’d need to buy white chocolate, though.
Just so you know, I don’t make “easy fudge” which isn’t fudge at all, IMO. I make the real deal, old fashioned, you need a candy thermometer (or know how to do a cold water test), can not be faked, fudge. If you’re interested I could do it.
I actually needed it today because the party is tomorrow. I went with the recipe amaguri linked (and I used Lindt white chocolate). It was remarkably easy to make, probably the easiest I’ve made so far. I tasted it and thought it was gross. My fiance tasted it and ended up licking off the spoon, spatula, and pot. I think it’ll be a success once it finishes setting.
The only problem I had was that my normal two fudge pots were in the dishwasher so I used my stock pot and it was too tall to clip the thermometer to the side. I nearly got a steam burn holding the thermometer over the fudge because I have never successfully done the water test.
I see that white fudge recipe is a variation of marshmallow cream fudge. My mom started making marshmallow cream fudge for Christmas when I was in elementary school. Our families still make it every holiday. The recipe is on the back of the jar,
Haven’t tasted white fudge before. Now I’m hungry and curious.
Huh. Interesting. El Hubbo is a big fan of white chocolate macadamia nut cookies, so when I wanted to make him a batch I bought some Ghiradelli white chocolate chips for the recipe. Well, it might have been “GOOD white chocolate,” but they had this really weird berry-tinged taste to them - made the cookies taste faintly of strawberries. (El Hubbo didn’t notice it, but I sure did.) Next time I made the recipe using plain ol’Hershey’s white chocolate chips, and no problem and no weird berry aftertaste.
Lindt’s probably what I should’ve looked for, but it was on a whim and my grocery store only had Ghiradelli.
I’m pretty sure Ghirardelli white chocolate chips are still the fake stuff (but their white chocolate bars are real, go figure). But yeah, the flavor of white chocolate can vary wildly. Extensive tastings are probably in order!
My favorite white chocolate by far is Green & Black’s, though it’s less of a baking chocolate and more of a DEVOUR IT QUICKLY chocolate.
