I was making sourdough bread and the dough was a little too moist. I let it rise in a bread pan but it wouldn’t hold its shape. I turned it onto a stoneware quarter-sheet pan and I was really disappointed when it rose out instead of out for the second rise. Not wanting to waste it, I baked it anyways and with a great crumb and now have perfect ciabata bread for turkey sandwiches tomorrow.
