If you are all full-time employees then I agree that calling you all FTEs is not only pointless, but takes longer to say than “people.”

But this one does have a useful meaning when analyzing staffing levels. Two part-timers equals one full-time equivalent. So if you have 10 full-time and 10 part-time you have 15 FTEs. A similar one is PMEs, paid man equivalents. 40 hours of overtime in a week is one paid-man equivalent. So, for example, if you have 10 employees consistently working hours equal to 12 PMEs, it would be cheaper to just hire 2 more people and reduce overtime.
