I’ve had Irish cheddar once and I didn’t like it. I’m willing to blame it on the place that served it. I certainly would try it again if it was in front of me, just not at that place. I’m willing to try most cheese over and over again.
Another vote for Kerrygold Dubliner. It’s lovely.
Looks like the Irish cheddar has been well weighed in on so I don’t feel too guilty with the slight hijack to recommend anyone who hasn’t tried Cashel Blue, to try it.

I was once a makin some garlic bread to go with some baked ziti, and I found myself in the grocerystore having to choose between Italian Rose Garlic Spread and a stick of Kerrygold Garlic and Herb Butter, after reading the ingredients on the Kerrygold Garlic Butter and seeing that it contained dill, I unfortunately had to chose the Italian Rose Garlic Spread. Sorry, but I don’t want dill infiltrating my garlic bread, the celtic culinary ideal, in this case, just didn’t translate.
I don’t think I’d like that either. But the unsalted Kerrygold Butter is fab!!
Goddamnitall! Now that I read this thread and began craving the kerrygold, I went to the grocery and… They didn’t have any! I’m hoping it was just exuberance in buying, and not a discontinue. The stuff is -good-!
