The background: in 1993 and 1994 I lived in Belfast while doing some charity work. I also worked off the books for cash at an Indian (well, Pakistani) restuarant. In addition to liking most any Indian entree, I developed a serious addiction to curry chips.
In the city I live in now (St. Louis), you can get any kind of Indian cuisine you like, but you can’t get any of the “fast food” I saw in Ireland–curry chips, kebabs, that sort of thing.
Can anyone from Britain or Ireland give me a recipe for the type of curry sauce they put on chips over there (it was spicy but not terribly HOT, and it struck me as having more of a korma taste than a curry taste)? There are a number of good international groceries in town, so I can get all kind of authentic ingredients, but I don’t like any of the canned curry sauces I’ve tried so far.
Once I had the sauce, all I’d have to do is find some primo french fries, and I’d be a happy girl.
