One grocery store I’ve occasionally bought some bulk feta from the deli puts it in a plastic clamshell with plenty feta water, this is almost impossible to get home without creating a mess. Today I had them wrap it in two bags by itself and it still spilled.
Is there a point to the feta water or in the future should I just pour it out in the parking lot?
The other groceries that carry it in the deli just wrap it in saran wrap, I just rewrap any unused portion when I put it in the fridge and haven’t noticed any serious drying but it usually doesn’t sit for long.
I was wondering if the water was used for something like cooking? It is a milky brine that has the taste of the cheese.
I’ve never seen the feta water used for anything, and I’ve actually done college-level research into Greek cooking.
As Caught@Work says, it’s there to keep the feta from drying out, and it’s also a preservative. Feta molds pretty quickly outside the brine, so if you’re going to keep it for any length of time, keep it in the brine.
If, as you say, you use it quickly, I don’t see any reason why you wouldn’t just have them wrap it in saran or cheese paper. It’ll be fine for at least a couple days like that.
