It’s a magnificent thing really.
You make this soup with water and cow feet. That’s it. Nothing else. It is sheer elegance in it’s simplicity. After cooking it all night, you wake up to possibly the heaviest breakfast you can have.
The soup is served in a bowl that you add garlic, vinegar and a bunch of dried out flat bread called lavash. And by a bunch of bread, I mean a metric shit ton of it. It should only vaguely resemble soup once you’ve added enough bread.
The purists don’t even require a spoon. You’re supposed to use more bread to scoop up the mixture of soup and bread.
Oh, and to wash it down, you drink vodka. Nothing else will do.
Did I mention this is a breakfast dish?
You can bet money I’m making some right when winter rolls around.
Fortunately, here in Southern California, the Armenian grocery stores sell a premade frozen stock. All you do is cook it for two or three hours, instead of all night.
