leftover ham recipes?

Anyone? I’ve got a lot of leftover ham. I’m not sure what to do with it. I’ve done grilled ham and cheese,ham & cheese omlettes and navy bean soup. I really need some different ideas. Help!!

I got this recipe from the Woman’s Home Companion Cook Book, from 1955. I love the old cookbooks for leftover recipes.
Noodle and Ham Casserole cook 8 or 9 ozs noodles, rinse & drain. Layer this in a dish with 2 cups of ground or chopped ham, sprinkle each layer with grated onion. Then, in a bowl, mix a can of cream o’mushroom soup with 2/3 cup of milk, pour over top. Top the whole thing with buttered bread crumbs. Bake 375° for 25 minutes or until brown.
I was amazed at the flavor, it wasn’t what I thought it would be, & have made it a lot.

How bout ham and scalloped potatoes?

Make a nice bechamel with lots of nutmeg; simmer an onion in it too. Put a little on the bottom of a baking pan. Layer thinly sliced potatoes, chopped ham, salt and pepper, and bechamel til done; make sure top layer is bechamel. Bake and enjoy.

I feel pretty stupid, but I’ve never heard the term bechamel before. What’s it mean?

Keep The ideas coming, I plan on using as many as I can.

A Scandanavian idea:

Put a slice or two of ham on well-buttered bread. (If it is thin and will curl up, that is even better.) Mix succotash with a little mayonaise and dry mustard and put it on top of the ham. Add a cucumber or lemon twist on top.

It is the only way that I will eat ham.

IOW,it’s a site that will answer your OP with dozens of responses.And if you find a ham loaf and make it,report back with the results.

Bechamel is white sauce. 2 tabs. butter
2 tabs. flour
2 cups milk

          Make white sauce by melting butter, add flour and cook
     until it bubbles.  Add hot milk and cook until sauce thickens.  My keyboard has a tendency to go belly up at times, so I’ve cut-and-pasted this notice from a special word processing document I created for just such an emergency.  I’ll contribute again after I feel like cycling power and waiting for a reset.

My favorite is to make homemade macaroni and cheese. Yum…

put cubed ham, shredded sharp cheddar cheese, onions, diced tomatoes and dry macaroni or ziti in a caserole dish. Pour in enough milk to cover. Sprinkle more cheese on top, and crumble crackers on top of that. Salt and pepper so the crumbs will be tasty. Bake in the oven, covered at 350 until done (uhm… maybe 2 hours?). Top will be crispy and bubbly, inside will be curdy and good.

Along the mac 'n cheese route, try…

Pasta Carbonara…just use minced ham instead of the bacon/pancetta.

Pasta All’Amatriciana is even better…saute minced ham with chopped onions and crushed red pepper, add tomatoes and cook until they break down, toss into cooked pasta.

Ham and Hash browns:

In a 9x13 casserole, melt 1 stick butter. Add 1 bag frozen hash browns, and some diced ham. In a bowl, mix 1 can cheddar cheese soup with 16oz. sour cream. Pour soup/sour cream mixture over potatoes. Top with shredded cheddar cheese and bake at 350 for 1 hour.

Saute some celery and onion together. Mix it with 3 1/2 cups cooked long grain rice, some chopped ham, 2/3 cup of raisins, 1/3 cup toasted walnuts. In another bowl mix 3 tablespoons honey, 3 tbsp lime juice, 1 tbsp olive oil, and 1/4 tsp each of salt, cinnamon, and pepper. Drizzle the sauce over the rice and ham mixture and dig in!

Yum, all these recipes have made me hungry.Now I just have to decide which one to make tonight. Thanks all.
