Let's not leave out the Irish - Whiskey that is

My hat’s off to the barkeep at the Irish Pub inside New York New York casino in Vegas.

Whist I was taking a break from losing my hinder on the three card poker table, he recommended a pour of an Irish Whiskey I had never had before, Redbreast. It was love at first taste. As soon as I returned to the concrete swamp I made a beeline for our local spirits merchant and purchased a bottle for myself.

If you have yet to try Redbreast, do so with all haste. Now! Life is too short to not be enjoying something this smooth.

Of course if you have other favorites, I’d like to hear all about them.

Redbreast is a right nice tipple. I’m not fond of Irish whiskies except as components of other concoctions, but I’d never turn down a dram, either. I don’t remember which Doper offered up this recipe, but I’m eternally grateful he did. It makes the winter so much more entertaining.

2 egg yolks

1 pint heavy cream (could use half and half if you’re a candy ass)

1 can sweetened condensed milk

1 tsp. vanilla

1 tsp. instant coffee dissolved in 1 Tbs. water

2 Tbs. chocolate syrup

6 - 8 oz. Jameson Irish Whiskey (6 makes it smooth, 8 kicks you in the ass - your choice) or Bushmills

Makes just over 1 liter.

Pour into bottles and refrigerate.

Shake before serving.

I gave my brother a bottle of Redbreast for Christmas. I had not tried any myself and chose on the basis of net research into what were considered the best Irish whiskeys. It turned out it was one his favorites but I haven’t had a chance to sample any of it yet. :frowning:

I do like Redbreast. Jameson’s 12 y.o. is the everyday Irish. Tullamore Dew is the nector of the gods. Recently, I’ve tried Bushmill white label. Not bad, but the above mentioned are much more to my preference.
