Looking for a fried zucchini batter

Hi!

On my recent vacation trip from Houston to the Grand Canyon and Hoover Dam, (Great vacation! Everyone should see the Grand Canyon) we stayed the night in Truth or Consequences, NM for the hot springs.

We got in late and there was one restaurant that was open–Los Arcos. I thought it would be a texmex (newmexmex) resataurant, but it wasn’t.

It was actually a very good restaurant, great steak/chicken restaurant,wonderful waiter and had a new kind of fried zucchini.

Long story short (TOO LATE!)

It was coin sliced, by hand. Not uniform cuts. Some were potato chip thin some a bit thicker. They had a light batter on them, that when fried–it was like it was inside a cracker. That’s the best description I have–the batter was cracker-like.

Not a heavy batter type thing.

I live in Texas. I’ve eaten fried EVERYTHING. I’ve never seen this style of battered anything.

I want to know how to make that batter.

Please help!

was it smooth or lumpy?
I usually use a plain flour and water batter for most of my batter frying needs.
Maybe a bread or panko batter?
