Specifically, I’m looking for a piece of software that will regularly (say, once a day) send a capture of the screen to an email or FTP or something like that.
Has anyone got an suggestions on this?

Many keyloggers have an option to send screenshots. Google for “Perfect Keylogger,”
You could use PrintKey (freeware) which takes a “snapshot” of the desktop whenever it is opened, and combine it with the built-in Windows Task Scheduler.
