Made a bacon explosion today

I decided to make one of these porky extravaganzas this morning. Wove the bacon, patted the sausage into place, added the cooked crumbled bacon and BBQ sauce and rolled it all up. Of course I added the rub in all the appropriate places.

Put it in the smoker for about 2 1/2 hours, then glazed with more BBQ sauce on the top and sides.

I thought it was pretty good, though I think I didn’t wrap it tight enough because it kind of falls apart when sliced. Maybe slicing thicker would be better?

Saw one of those made at a 4th of July cookout a few years ago. Can’t recommend making them on a bar-b-que, as the the fat caught fire, dripped down, and set everything below in flaming bacon grease goodness. We had bacon-flavored hot dogs, bacon-flavored hamburgers, bacon-flavored sausages…

Anyway, though an interesting endeavor, I found it didn’t live up to expectations. Just bacon and sausage, nothing special. :frowning:

I made one for my son’s 16th birthday (at his request). It’s a fun culinary experience, but I also found taste-wise it just wasn’t special. It tasted like bacon and sausage. I’d rather have just the bacon. I put chopped onion and bell pepper in mine too, and a layer of shredded cheese. We sliced it and put it on buns or biscuits. It wanted to fall apart. It was good fun, but too much trouble for too little return to be on the regular menu.

You say that like it’s a bad thing…

I’d probably not make another one, but if I did, I like the cheese idea. I did it in the smoker, so no problems with flareups. There was a lot of grease in the water pan though. better there than in me.

Ditto this. I made one last year for a friend’s party. Alot of fun as a novelty and very tasty, but not worth all the effort to repeat.
