I have recently discovered some ice cream (on a stick) brands here in the states that are only 100 calories a piece. They are awesome but because people are averse to artificial flavoring I have to sprinkle splenda on the ice cream to get it sweet enough.
BTW: how do they make the ice cream to taste like peanut butter with little calories?? where do I get that extract!
I would like to make my own already sweetened ice cream using the following ingredients (and whatever else is needed):
kefir or greek yogurt
Splenda and stevia
Xanthan gum
Coffee and vanilla extracts
Okay that is all that I know so far… I have never made ice cream and I have no idea what is needed or how to proceed. Does anyone have a recipe with these ingredients included or a general direction for me to follow?
Frozen bananas are a pretty damn good substitute for ice cream (providing you like the flavour of banana, and are OK with the calorie and nutrition profile of bananas of course) - you just take a ripe banana (yellow with brown speckles), peel it and wrap in cling film, then freeze - they can be unwrapped and eaten as they are (they freeze fairly soft and bite-able if you don’t have sensitive teeth), or if you have a blender that can handle it, they can be blended from frozen with other flavourings to make a decent spoonable icea cream substitute.
There are many companies that produce non-caloric flavoring for the consumer market… I personally use Lorann Oils in a lot of my baking and most of them are pretty good. They do offer a peanut butter flavoring but I’ve never used it so YMMV
