Making flavor extracts.

At work we have a ton of mint growing in the small garden. I don’t want it to go to waste so I’m considering making mint extract.

After looking around it seems to be “Clean the leaves and seperate them from the stem. Stuff a cupful in a jar, and pour over it one cup of vodka. Seal tightly and let steep for at least four weeks. Strain and pour liquid extract into a dark bottle or jar.”

Has anyone else here made extracts? Got any other tips?
