Margarita Meltaways and other boozy holiday treats

So, I bought a magazine full of holiday cookie recipes and listened to Tako on Deep Fried Live and decided to bake some cookies. All the recipes say all-purpose flour, but I used cake flour. There was a recipe for lime meltaways, but it had a tablespoon of vanilla in it, and I can’t stand vanilla. So I substituted 1800 silver tequila for the vanilla and added about a teaspoon and a half of Cointreau and converted them to Margarita Meltaways.

Here is my recipe:

Margarita Meltaways
3/4 cups salted butter
1/3 cup powdered sugar
2 cups cake flour
2 tablespoons corn starch
grated zest of two limes
1 ounce of fresh lime juice (juice of one lime tonight, your limeage may vary)
1 tablespoon tequila
1 and 1/2 teaspoons Cointreau
1/4 teaspoon kosher salt

Mix together salt, cake flour, and corn starch, set aside.
Using whisk attachment for mixer, whisk butter and 1/3 cup powdered sugar beat on medium speed until pale and quite fluffy.
To the butter misture, add lime zest, lime juice, cointreau, and tequila mix until fluffy.
On low speed, add flour mixture a bit at a time until it is all in and stir until just mixed.
Divide dough in half, shape into logs about an inch and a quarter thick, wrap in cooking parchment. Chill for an hour or so. Cut dough into 1/4 inch thick disks and place an inch apart onto parchment lined cookie sheets. Bake for 13 minutes at 350 F until barely golden. Take out and let cool on wire racks for about 5 minutes and then, while still warm, toss in a bag filled with 1 cup powdered sugar and 3 pinches of popcorn salt. Remove from bag and shake off extra sugar.
