I’m trying to think of movies where bullying is a significant part of the movie, and one of the main characters stands up to the bullies. This could be kids or adults fighting bullies. The person fighting the bullies doesn’t have to win.
This is all I can think of so far, but I know there are other great movies out there that have covered this topic. Any additions?

I don’t remember what it was called, but there was some movie that had, as a climax, the protagonist fighting back against the bullies using a squirt gun loaded with urine.

Maybe a slight stretch from what the OP describes…but in The Girl With The Dragon Tattoo, the eponymous girl is molested/raped by her state guardian before completely reversing the situation.
In City of Joy, one of the protagonists (and his family) experiences repeated bullying from another character before dramatically standing up to him.
In Tampopo, the ramen show owner’s son is beaten up by fellow school kids early in the movie. later on, he manages to defeat all three of them.

Not a fight, but Max Keeble’s Big Move has the nerds getting revenge on the bullies.
