I don’t think I can pick a favourite solo, but Santana on Everybody’s Everything is the first that comes to mind. A high-octane song that Carlos kicks into overdrive with his guitar.

Maybe it’s partly just relief that the brain-killingly bad lyrics and singing are over, but the guitar solo to “Sweet Child of Mine” is just amazing. Clapton-esque lyricism, Jimmy Page swagger, and whoever-your-favorite-metal-shredder-is wailing.
In addition to Quine, Richard Lloyd’s work on those three albums (Girlfriend, Altered Beast, and 100% Fun) was just awesome. Gloriously ragged and messy in a way that really elevated some of Matthew Sweet’s otherwise too…sweet…material.
I’ll throw in Audioslave’s Like A Stone. Not on the same level as most of these, but it sounds kinda like an alien trippin’ on LSD. Or something. I like it.

I’d be hard pressed to pick just one, but I’ve always really liked the solo from Lunatic Fringe by Tom Cochrane & Red Rider

It’s more “dark pop-rock” than rock but one of my favourite guitar solos is in Axel Bauer’s Cargo de Nuit.
What I like about it is that it uses some unusual, vaguely oriental scales without sounding like a parody. The musical ideas are catchy and weird at the same time and while it doesn’t seem difficult, it’s kind of tricky to get it right because the fingerings are often unpredictable and slightly outside the box.

The first guitar solo I remember noticing when I was a kid was Pink Floyd’s Mother.
