My favorite cake

Macadamian nut cheesecake…mmm

I also have a killer recipe for rum cake

Carrot cake with “german chocolate cake”-type frosting. Only one friend has ever loved me enough to actually make me one. The others say 'eeww. . . no one else will like that." I don’t care. Bring me my cake. It’s my birthday, damnit.

Oh, I forgot option B: Had this all the time in da kine but can’t find it on the mainland and if any kama’aina dopers know a recipe please share-- guava cake. Mmm. Like angelfood cake but pinkish in color with guava-y goodness.

Oooh boy, this thread is making me hungry.

My ex and I used to make the most amazing killer-black-forest-cake from hell. The first time we made it, we accidentally put about twice as much chocolate in as the recipe called for. We liked it that way

Pineapple upside-down cake.

I stumbled across this one recently when out of frosting. Make yellow or white cake in bundt pan, while still warm, slice and top with good quality jam…mmmmm. Better than frosting. Easy, too!
Or black forest cake with cherries, the only kind of chocolate cake I like.

OTOH, cake I can’t stand: that “cheap bakery” chocolate stuff with the horrible white sugar frosting piled on, it is so sweet my teeth shrivel up just thinking about it. Always served at office parties.

Wow. I’m probably the dullest here. Yellow cake, outta the box, with Chocolate frosting, outta the plastic tub. Vanilla ice cream on the side.

Sprinkled with pepper.

okay, I lied, no pepper. It. just. seemed. so. dull.

Ahem.

I guess I’m dull too.

Mmmm… cake!

Don’t get a pastry chef talking about cake!
A few of my favorites:

Carrot cake (I saute the carrots with fresh grated ginger and add crushed pineapple to the batter) with cream cheese frosting

Devil’s Food with a good fudgy chocolate frosting.

Chocolate torte layered with raspberry filling and covered in chocolate ganache

Vanilla cake layered with whipped cream and fresh strawberries
(Oh, I could go on…)

Wacky cake with buttercream frosting

Hey! I know about wacky cake!!! My mother-in-law makes it. I thought that it was something she made up.

Oh yeah!! That’s my favorite too. Just made a carrot cake last week. Yum.

My husband’s great-grandmother used to make this amazing cake from scratch, even the icing. She would only make it twice a year, Christmas and Thanksgiving.
It’s a yellow cake with chocolate icing drizzled all over the top and sides AND through the middle. The chocolate was so rich and dense that the middle of the cake would collapse from the weight.
It was Heaven on a plate. We’d all eat huge pieces of it knowing that later we’d all be sick as dogs from it, but it was worth it.

My Mom used to make wacky cake. She passed away 16 years ago. I haven’t had it since. Could someone post the recipie?

A dense chocolate cake with dark chocolate icing. The more the consistency is like fudge, the better.

The good bakery cakes with white cake (light and spongy) with sugary, thick icing. Think wedding cake, baby shower cakes, etc. I drool for icing. I can’t understand people who actually scrape it off.

This is my mother-in-law’s recipe for wacky cake

Into a 9 by 13" pan sift together 3 times

3c. flour
6 Tblsp cocoa
2c. sugar
1 tsp salt
1 tsp baking soda

Make three wells in the dry ingredients
Into the first well put 2 tsp of vanilla.
Into the second put 10 Tblsp of melted butter.
Into the third put 2 Tblsp of vinegar.

Pour 2c. warm water over everything and stir.

Bake at 350 for about 30 minutes or until a toothpick comes out clean.

I’ve never made it myself. Hope it turns out for you.

Slainte hit the cake on the head. Ain’t nothing better than a big slice of red velvet with cream cheese icing and a tall glass of milk (with ice of course.)

BTW, Leifsmama, I’m sure you know your recipe will do nothing but make a bubbling mess on the floor once you add the vinegar. At least you could have added food coloring so it would stain as well.

I have that Penn and Teller book too. I’ve tried to pass it off to people, but my pals are smart enough (or leery enough). Baking Soda and vinegar are fun.

Yet another reason to adore you, Max  Except no milk & ice - ewww!

Take notes, all, for October 9.

The best cake is a Boston Cream Pie. (Which, of course, is not a pie. For our furriners: It’s a sponge cake, divided into two thin layers, between which is slathered vanilla custard. The entire construction is then thoroughly swaddled in chocolate icing.) With honorable mentions to chocolate cake w/chocolate icing, pineapple upside-down cake, and rum pound cake.
